Petiscos - Snack Foods

Farturas (Fry bread)

 MeasureIngredient / Preparation
 5 dL Water
 1 pinch Salt
 1 Tbs Butter or margarine
 300 grs Flour
 - Oil, for frying
 - Sugar & Cinnamon

Combine the water, a pinch of salt, and the margarine in a pan and set it on the stove.  Once it comes to a boil, add all of the flour at once, and stir vigorously with a wooden spoon.

Remove the pan from the heat and continue to stir until you have a soft, stretchy dough.  Cover the dough and let stand for 15 minutes.  Pour the dough into a pastry bag with a large mouth tip (can be any design you want).

Fry the farturas in hot oil, squeezing the dough out in circles in the oil.  Fry until lightly brown, turning over if necessary.

Remove the farturas to paper towel to drain the excess oil, and cover with cinnamon and sugar while still hot.

Figos com Presunto (Figs with Smoked Ham)

 MeasureIngredient / Preparation
 4 lg Ripe figs
 1/2 lb Thinly sliced prosciutto
 4 tsp Olive oil
1/2 tsp Freshly ground black pepper

Wash the figs well, then divide into eighths, cutting from the stem to within about 3/8" of the bottom, so that you can spread the wedges out like petals.

On each of 4 salad plates, arrange 5 to 6 slices of prosciutto spoke-fashion to resemble flower sepals.  Drizzle lightly with olive oil and sprinkle with pepper.

Place a fig in the centre of each then spread the wedges out like opening flowers.  Let stand at room temperature for 1 to 2 hours then serve at the start of an elegant meal.
